Ginger infused Daikon and Chicken soup

Ingredients: (serves 2~3)

Daikon……………..8 inches for a skinny daikon and 5 inches for a fat daikon

Ginger slices………3 slices

chicken wings……..3~5

salt

scallion

Direction:

1. Peel Daikon skin using peeler.

2. Cut daikon in half length wise (in quarter if daikon is fat)

3. Slice halved (quartered) daikon into thin slices (about 1/8 inches)

4. wash chicken wings under cold water, pat dry and set it aside

5. In a pot, put 5 cups of water, daikon slices, ginger slices, chicken wings and a pinch of salt.

Bring it to boil.

6. Skim off the scum on the surface using ladle and turn down the heat to simmer.

7. Simmer for at least 30 minutes until daikon slices are soft. Keep skimming the scum during

simmering.

8. Taste and adjust the salt to your preference. Serve in individual bowl and top with finely

chopped scallion.

Tips: You can arrange this soup by sprinkling some black peppers, squeeze some lemon or

lime, drizzle hot sauce, etc. Daikon warms your body from indie out. Enjoy and stay warm!
