Anti-aging bitter melon summer salad

Ingredients: (serves 2)

1 bitter melon

10 mini tomatoes

10 shiso leaves

1 table spoon of extra virgin olive oil

salt & pepper

1/2 lemon

Direction:

1. Cut bitter melon into half lengthly to expose seeds.

2. With spoon, scoop out seeds along with white spongy part

3. Slice thinly and put them into a bowl

4. Add half tea spoon of salt to the bitter melon slices and massage them well until they release some water

5. Rinse salted bitter melon with cold water and soak them in big bowl of water for 5 minutes (Soak them longer for less bitter taste)

6. Drain the bitter melon slices and squeeze out excess water

7. Cut tomatoes into half

8. Julienne shiso leaves into thin strips

9. In a bowl, put bitter melon slices, halved tomatoes, 1/2 of julienned shiso leaves, salt & pepper, olive oil and juice of half of lemon. Mix well

10.Serve on a plate and top it with remaining shiso leaves.

Bitter melon is packed with antioxidant that will fight aging caused by sun exposure. Combine it with Vitamin C rich tomato and shiso leave, this is the perfect rescue salad during this hot season
