Clear kelp soup with mitsuba and clam

Ingredients: (serves 2)

Dried Konbu kelp………….5 inches long

little neck clams……………6

sake…………………………1 table spoon

salt………………………… .1 pinch

soy sauce……………………1/2 tea spoon

water…………………………2 cups

mitsuba………………………1/2 bunch (chopped)

Direction:

1. In a pot, put water and dried konbu and let it stand for 30 minutes. (or longer up to over night)

2. wash the clams well

3. Bring the pot with water and konbu to boil and remove the konbu.

4. Add clams, sake, soy sauce and salt. (Clams have different saltiness, so adjust the salt accordingly after tasting the broth)

5. When clams open, turn off the heat and serve in individual bowls.

6. Sprinkle some chopped mitsuba and serve immediately.

Tips:

If clams do not open at the same time, take out the opened ones to avoid over cooking. After the last clam is open, then add back previously opened ones.
