Cold rolled cabbage salad with creamy shiso and tofu sauce 

Ingredients: (serves 4) 

4 large cabbage leaves 

1 cucumber julienned 

1 tomato chopped 

4~8 shiso leaves 

creamy shiso and tofu sauce: 

8oz silken tofu 

10 shiso leaves 

1/2 clove of garlic 

1/2 lemon juice

1/4 cup of water 

1/3 tea spoon of salt 

black pepper 

Direction: 

1. cut out the core of cabbage and blanch in hot boiling water for 3 minutes. 

2. put it in an ice bath and peel off the leaves 

3. pat the leaves with paper towel well to dry 

4. lay one leaf and put 1~2 shiso leaf, some julienned cucumber and chopped tomato. 

5. roll it just like making burrito and set it aside 

6. put all the creamy shiso and tofu sauce ingredient in a blender (hand blender also works) and mix well until smooth. 

7. cut rolled cabbage into 3 pieces. Pour generous amount of sauce on a serving plate and assemble cut out cabbage pieces in center.
