Crushed cucumber summer pickles
Ingredients:
2 fresh Japanese cucumber
1/2 tea spoon of salt
1/4 cup of sushi seasoning vinegar
3 slices of ginger julienned (optional)
Japanese hichimi (seven spice) pepper (optional)
Direction:
1. Wash cucumber well and cut off both ends.
2. Using wooden bar or rolling pin, gently hit the cucumber until it cracks.
3. Separate the cracked cucumber into a bite size and put them into a ziplock or plastic bag.
4. Put salt into the ziplock and massage the cucumber pieces well.
5. Pour in sushi seasoning vinegar and julienned ginger and massage well.
6. Let the air out of the bag and seal.
7. Let it sit in the fridge for at least 20 minutes. (can be stored in the fridge up to 3 days)
8. Put the marinated cucumber pieces on the serving plate and sprinkle some hichimi if you like the spicy version.
*Very easy, but refreshing pickles that’s perfect with any meal or snack. If sushi seasoning vinegar is hard to find, substitute with 1/4 cups of rice vinegar, 1 table spoon of sugar and 1 tea spoon of salt.
