Seri (Japanese parsley) Risotto with Ginger

Ingredients: (serves for 2~3)

  • 1/2 cup of Japanese sushi rice
  • 4~5 cups of water
  • 1/2 bunch of seri
  • ginger
  • pickled ume plum (optional)
  • salt


1. Wash the rice well and drain.

2. Put the washed rice and water in a pot and let it come to boil. Stir occasionally to prevent

rice from sticking on the bottom.

3. Lower the heat and simmer for 30~40 minutes until the rice becomes soft and creamy.

4. Chop the seri into 1/2 inch long length and add to the pot and mix well.

5. Turn off the heat and add about 1 teaspoon of salt. Taste and adjust accordingly.

6. Serve it in individual bowl and top it with julienne ginger strips and pickled ume plum.
