Warm Shungiku salad with bacon

Ingredient: (Serves 2)

1 bunch of Suzuki Farm Shungiku

2 slices of bacon

1 clove of garlic chopped

1/2 lemon

1 hard boiled egg chopped

salt and pepper

1. Wash Shungiku with cold water and drain well

2. Cut off the bottom part of stem which is too hard to eat

3. Chop Shungiku into 1/4inch strips and put them into a mixing bowl

4. Slice bacon into 1/2 inch long and put them into a frying pan

5. Slowly brown the bacon pieces over medium heat until they are brown and crispy

6. Add chopped garlic and turn off the heat

7. Pour bacon chips along with garlic and bacon oil over the Shungiku

8. Squeeze lemon juice and salt and pepper to taste. Toss well.

9. Serve over a plate and garnish with chopped hard boiled egg.

Shungiku is rarely eaten raw as they have strong and bitter flavor. Suzuki Farm’s Shungiku is exceptionally sweet and mild and great for salad. It pairs perfectly with rich taste of bacon and makes great winter salad. Enjoy!
