Winter vegetable hot pot with salmon

Ingredients:(serves 2) 

konbu kelp..............6inch long 

water.......................5 cups 

sake........................1/4 cup 

komatsuna..............1 bunch 

mizuna....................1 bunch 

daikon radish...........6 inch long 

salmon filet (without skin)........1/2 lb finely 

chopped scallion..........4 table spoons 

grated ginger.........................1 table spoon 

ponzu yuzu (optional) 

cooked rice......................2 cups 

egg.................................1 

soy sauce/salt 

Direction: 

1. In a pot, put konbu kelp, sake and water and let it stand for 20 minutes. 

2. Wash all of vegetables and drain well. 

3. Peel daikon radish skin and lengthly cut half. Then slice into 1/4inch thickness half moon shapes. 

4. Cut off the stem part of komatsuna and mizuna and cut them into 5inch long. 

5. Slice salmon filet into rather big bite size chunks as it shrinks when cooked. 

6. Prepare the dipping sauce by pouring ponzu (about 1/4 cup each) into an individual bowl for each person and put chopped scallion, grated ginger and if you have yuzu, some julienned skin and squeeze juice. 

7. Put half moon shaped daikon slices into the pot with water, konbu and sake. 

8. Let the daikon simmer for 15 minutes or until they are fully cooked. 

9. Add 1/3 of mizuna, komatsuna and salmon and as they cooked, put as much as you want into your bowl with ponzu mixture. Dip and eat. 

10.Continue to add vegetables and salmon untill all are gone. 

11.In a remaining soup add cooked rice and cook for 

10 minutes mixing occasionally. Rice will expand and absorb most of the soup. If needed, add some water. 

12.To finish off, add one beaten egg and mix slowly. 

13.Taste with soy sauce or salt to your preferred saltiness. 

14. Sprinkle with remaining scallions and enjoy. 

Tips: 

Hot pot is very flexible and delicious way to enjoy vegetables, meat, fish and tofu. You can put other ingredients other than those introduced here. The remaining soup is so delicious that should be enjoyed either by putting rice or noodle. Enjoy and stay warm! Winter vegetable hot pot with salmon
