Marinated Baby Tomatoes with ginger

Ingredients (serves 2~4)

20 baby tomatoes

3 thinly sliced ginger

3 leaves of shiso

1/3 cup of sushi vinegar


1.Make a tiny slit on bottom of tomatoes with sharp knife.

2.Put all the tomatoes into boiling water for 30 seconds.

3.Scoop out all the tomatoes and put them into ice bath immediately.

4.Drain them well. The skin should peel very easily from the slit made earlier.

5.Put thinly sliced ginger in sushi vinegar.

6.In a Ziploc, put peeled tomatoes and vinegar with ginger. Take out excess air to let tomatoes be covered by vinegar.

7.Let it stand for at least 1 hour in the fridge. Serve them with julienned shiso leaf.

Tips: You can store this in fridge for up to a week. Feel free to add your favorite herbs and spices to enjoy the variation. Great as is or with other vegetables, grilled meats or seafood. Enjoy!
