Cold soba and daikon salad with tahini ponzu dressing
Ingredients: (serves 2)
dried soba noodle………….100 g (3.5oz)
shredded daikon……………1/2 cup
shredded cucumber………..1/2 cup
scallion……………………….2~3 stalks
lime……………………………1/2
dressing:
tahini paste…………………1 table spoon
ponzu………………………..3 table spoon
water…………………………2 table spoon
wasabi paste………………..1 tea spoon (optional)
Direction:
1. Cook soba noodle in big pot of water and follow the cooking time on its package. Usually about 5~6 minutes.
2. Drain the noodle and wash well with hands under running cold water. Drain well and set it aside.
3. Finely chop scallion.
4. Prepare dressing by mixing all the ingredients well in a small bowl.
5. Assemble soba, shredded cucumber, shredded daikon and chopped scallion on a serving plate.
6. Drizzle dressing and squeeze lime before serving.
Tips:
Be sure to wash soba well under running cold water and drain well. Shred daikon along its fiber to keep its delicious crunchy texture. Easy and healthy summer noodle salad!
