Stuffed kabocha Jack-o’-lantern

Ingredients:(serves 8) 

1 pumpkin! 1/2 pounds of ground beef (can be substituted with chicken, pork, turkey, etc)

1/4 sweet onion (mild onion like spanish, sweet, red or white) finely minced

1/4 cup panko bread crumbs (soak this with 3 Tbsp of milk for 5 min)

1 Tbsp Worcester sauce

1 1/2 tsp salt! black pepper

1 large egg


(pre-heat the oven to 400 degree F)

1. Cut off very thin slice from the bottom of the pumpkin, so it’s nice and stable.

2. Just like when you’re making Jack-o’-lantern, cut a small circle around the top stem to remove the top part.

3. With spoon, spoon out the seeds and stringy part.

4. Make the filling by mixing ground beef, milk soaked panko, Worcester sauce, salt, pepper and egg in a bowl. Mix well and stuff into the pumpkin’s cavity.

5. Wrap the pumpkin with aluminum foil and bake for 50 minutes.

6. Remove the top and bake for another 20 minutes or until the stuffing is cooked. (you can test this by inserting skewer or chopstick and if the juice is clear, it’s done)

7. When cooled down a little, curve out the face as optional.

*It’s a funs ay to enjoy sweet kabocha for the Halloween! Makes a great kid’s project. Enjoy!!
