Super quick nappa cabbage soup with scallion and bacon
Ingredients: (serves 2~3)
Nappa cabbage……………..3~4 leaves
Scallion……………………….1 bunch
bacon………………………….2 slices
Chicken stock…………………3 cups
Ginger…………………………3 thinly sliced pieces
salt and pepper
Direction:
1. Cut nappa cabbage into 1/2 inch wide strips.(julienne for quicker cooking time)
2. Finely chop scallion.
3. Finely julienne ginger slices
4. Slice bacon into 1/2 inch wide pieces.
5. Sauté bacon in a non-stick pan until slightly crispy (no need to add any oil)
6. Add nappa and sauté until lightly browned. Add scallion and sauté another 1 minute.
7. Add chicken stock and let it simmer for 5 minutes.
8. Salt and pepper to taste and serve in an individual soup bowl.
9. Garnish with julienned ginger and serve.
Tips:
This is a super easy and quick soup full of flavor. Perfect summer pick me up soup!
